Ingredients

  • Beef chuck - 300 grams, cut into small cubes
  • Corn tortillas - 4 pieces
  • Tomatoes - 2 medium, roasted and blended
  • Onion - 1/2 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Dried guajillo chili - 2, seeds removed
  • Cumin - 1/2 teaspoon
  • Oregano - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable oil - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. In a small pot, boil water and soak the dried guajillo chilis for about 10 minutes until softened. Drain and blend with roasted tomatoes until smooth.
  2. In a large skillet, heat vegetable oil over medium heat. Add chopped onions and minced garlic, sautéing until translucent.
  3. Add the cubed beef to the skillet, browning on all sides. Season with cumin, oregano, salt, and black pepper.
  4. Pour the blended tomato and chili mixture over the beef, stir to combine, and bring to a simmer. Cover and cook for about 30 minutes, stirring occasionally, until the beef is tender.
  5. While the beef is cooking, warm the corn tortillas on a dry skillet for about 30 seconds on each side.
  6. Once the beef is tender, taste and adjust the seasoning if necessary. Assemble the tacos by placing beef filling onto each tortilla.
  7. Garnish with fresh cilantro and serve immediately.
