- Taco corn tortillas - 4 pieces
- Tamarind paste - 2 tablespoons
- Fresh ginger, grated - 1 tablespoon
- Garlic, minced - 2 cloves
- Onion, finely chopped - 1 small
- Cilantro, chopped - 2 tablespoons
- Lime, juiced - 1 lime
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 150 ml
Steps
- In a medium bowl, combine tamarind paste, grated ginger, minced garlic, lime juice, salt, and black pepper. Mix well to create the marinade.
- Cut the beef flank steak into thin strips and add to the marinade. Let it marinate for at least 15 minutes.
- Heat olive oil in a skillet over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes.
- Add the marinated beef along with the marinade to the skillet. Cook for 8-10 minutes, stirring occasionally, until the beef is cooked through and tender.
- Add water to the skillet and let it simmer for an additional 5 minutes until the sauce thickens slightly.
- Warm the corn tortillas in a separate pan or microwave.
- To assemble the tacos, place a portion of the beef mixture onto each tortilla and garnish with chopped cilantro.
- Serve the tacos immediately with lime wedges on the side.
