  • Garlic - 2 cloves, minced

  • Olive oil - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 250 milliliters

Steps

  1. In a pot, heat the olive oil over medium heat and add the chopped onion. Sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and continue to sauté for another minute until fragrant.
  3. Cut the beef flank steak into small cubes and add to the pot. Season with salt, black pepper, and cumin powder. Brown the beef on all sides, about 5-7 minutes.
  4. Stir in the tamarind paste and water. Bring to a simmer, cover, and cook on low heat for about 25 minutes, or until the beef is tender.
  5. Once the beef is cooked, stir in the chopped cilantro and cook for an additional 2 minutes.
  6. While the beef is finishing, heat the corn tortillas on a dry skillet for about 30 seconds on each side until warm and pliable.
  7. Assemble the tacos by placing a portion of the beef mixture in each tortilla. Top with extra cilantro if desired and serve immediately.
