- Tamarind paste - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Olive oil - 1 tablespoon
- Cumin powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 250 milliliters
Steps
- In a pot, heat the olive oil over medium heat and add the chopped onion. Sauté until translucent, about 3-4 minutes.
- Add the minced garlic and continue to sauté for another minute until fragrant.
- Cut the beef flank steak into small cubes and add to the pot. Season with salt, black pepper, and cumin powder. Brown the beef on all sides, about 5-7 minutes.
- Stir in the tamarind paste and water. Bring to a simmer, cover, and cook on low heat for about 25 minutes, or until the beef is tender.
- Once the beef is cooked, stir in the chopped cilantro and cook for an additional 2 minutes.
- While the beef is finishing, heat the corn tortillas on a dry skillet for about 30 seconds on each side until warm and pliable.
- Assemble the tacos by placing a portion of the beef mixture in each tortilla. Top with extra cilantro if desired and serve immediately.
