Ingredients

  • Beef flank steak - 300 grams
  • Fresh tamarind pulp - 100 grams
  • Water - 250 ml
  • Garlic cloves - 2, minced
  • Onion - 1 small, diced
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Corn tortillas - 4
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, cut into wedges

Steps

  1. In a pot, combine the tamarind pulp and water, bring to a boil, then reduce heat and simmer for 10 minutes. Strain the mixture to remove any solids, and set aside the tamarind sauce.
  2. Heat olive oil in a skillet over medium heat. Add diced onion and minced garlic, sautéing until softened and translucent.
  3. Cut the beef flank steak into small pieces and add it to the skillet. Season with cumin, salt, and black pepper. Cook until the beef is browned on all sides, about 7-10 minutes.
  4. Pour the tamarind sauce over the cooked beef, stirring to combine. Simmer for an additional 15 minutes until the beef is tender and the flavors meld together.
  5. While the beef is cooking, warm the corn tortillas in a separate pan or on a griddle until pliable.
  6. To assemble, place a portion of the tamarind beef mixture onto each tortilla, garnish with chopped cilantro, and serve with lime wedges on the side.
