Ingredients

  • beef flank steak - 300 grams
  • pineapple chunks - 150 grams
  • onion - 1 medium, chopped
  • garlic - 2 cloves, minced
  • jalapeño pepper - 1, chopped
  • cumin - 1 teaspoon
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • olive oil - 1 tablespoon
  • corn tortillas - 4
  • fresh cilantro - 2 tablespoons, chopped
  • lime - 1, cut into wedges

Steps

  1. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté until translucent, about 3-4 minutes.
  2. Add the beef flank steak to the skillet, season with cumin, salt, and black pepper. Cook for about 5-7 minutes, browning the meat on all sides.
  3. Stir in the chopped jalapeño and pineapple chunks. Cover and let it simmer for another 10-15 minutes until the beef is tender and cooked through.
  4. While the beef is cooking, warm the corn tortillas in a separate pan or directly over the flame until pliable.
  5. Once the beef is done, remove it from the heat and let it rest for a few minutes before slicing it into thin strips.
  6. Assemble the tacos by placing a portion of the beef mixture on each tortilla. Top with fresh cilantro and a squeeze of lime juice. Serve immediately.
