Ingredients
- beef flank steak - 300 grams
- pineapple chunks - 150 grams
- onion - 1 medium, chopped
- garlic - 2 cloves, minced
- jalapeño pepper - 1, chopped
- cumin - 1 teaspoon
- salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- olive oil - 1 tablespoon
- corn tortillas - 4
- fresh cilantro - 2 tablespoons, chopped
- lime - 1, cut into wedges
Steps
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté until translucent, about 3-4 minutes.
- Add the beef flank steak to the skillet, season with cumin, salt, and black pepper. Cook for about 5-7 minutes, browning the meat on all sides.
- Stir in the chopped jalapeño and pineapple chunks. Cover and let it simmer for another 10-15 minutes until the beef is tender and cooked through.
- While the beef is cooking, warm the corn tortillas in a separate pan or directly over the flame until pliable.
- Once the beef is done, remove it from the heat and let it rest for a few minutes before slicing it into thin strips.
- Assemble the tacos by placing a portion of the beef mixture on each tortilla. Top with fresh cilantro and a squeeze of lime juice. Serve immediately.
