Ingredients
- Beef flank steak - 300 grams
- Pineapple - 150 grams, diced
- Fresh ginger - 30 grams, grated
- Garlic - 2 cloves, minced
- Soy sauce - 30 ml
- Lime juice - 15 ml
- Olive oil - 15 ml
- Corn tortillas - 4 pieces
- Fresh cilantro - 20 grams, chopped
- Salt - to taste
- Pepper - to taste
- Avocado - 1, sliced (for serving)
- Radishes - 50 grams, thinly sliced (for serving)
Steps
- In a bowl, combine the diced pineapple, grated ginger, minced garlic, soy sauce, lime juice, and a pinch of salt and pepper to create the salsa. Set aside to marinate for at least 10 minutes.
- Season the beef flank steak with salt and pepper on both sides. Heat olive oil in a skillet over medium-high heat.
- Once the oil is hot, add the beef steak and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from the skillet and let it rest for 5 minutes.
- While the beef is resting, warm the corn tortillas in the same skillet for about 30 seconds on each side until pliable.
- Slice the beef thinly against the grain and assemble the tacos by placing the beef slices on the warmed tortillas.
- Top the beef with the ginger-pineapple salsa and garnish with chopped cilantro, avocado slices, and radishes.
- Serve immediately with lime wedges on the side.
