- guava paste - 50 grams
- pineapple - 100 grams, diced
- fresh cilantro - 30 grams, chopped
- lime - 1, juiced
- salt - to taste
- black pepper - to taste
- corn tortillas - 4
Steps
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Season the flank steak with salt and black pepper, then sear it for about 4-5 minutes on each side until it's cooked to your desired doneness. Remove from heat and let it rest before slicing it thinly.
- In the same skillet, add the remaining olive oil and sauté the minced garlic and grated ginger for about 1 minute until fragrant. Stir in the diced pineapple and cook for another 2-3 minutes until softened.
- Add the guava paste and lime juice to the skillet, mixing well to create a sauce. Allow it to simmer for about 5 minutes, stirring occasionally.
- Combine the chopped cilantro with the sliced beef in a bowl, then pour the guava and pineapple sauce over it, mixing until well coated.
- Warm the corn tortillas on a skillet for about 30 seconds on each side. Assemble the tacos by placing the beef and salsa mixture in the center of each tortilla.
