Ingredients

  • Beef flank steak - 300 grams
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, chopped
  • Tomatoes - 2 medium, diced
  • Green bell pepper - 1 medium, chopped
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, juiced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Corn tortillas - 4
  • Avocado - 1/2, sliced for garnish

Steps

  1. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
  2. Add the beef flank steak to the skillet and brown on all sides, about 5-7 minutes.
  3. Stir in the diced tomatoes, green bell pepper, cumin, chili powder, salt, and black pepper. Cook for another 5 minutes, allowing the tomatoes to soften.
  4. Add 1/2 cup of water to the skillet, cover, and reduce heat to low. Let simmer for 20 minutes, or until the beef is tender.
  5. Once the beef is cooked, remove it from the skillet and shred it using two forks. Return the shredded beef to the skillet and mix with the salsa.
  6. Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.
  7. To assemble the tacos, place a generous amount of the beef salsa mixture on each tortilla. Garnish with cilantro, a squeeze of lime, and slices of avocado before serving.
