- Dried guajillo chilies - 2 pieces
- Garlic - 2 cloves
- Onion - 1 small
- Cilantro - 2 tablespoons, chopped
- Lime - 1, for serving
Steps
- Start by marinating the beef. Rub the flank or skirt steak with olive oil, salt, and black pepper. Let it sit for 15 minutes.
- While the beef marinates, prepare the salsa roja. Remove the stems and seeds from the guajillo chilies and soak them in hot water for 10 minutes until softened.
- In a blender, combine the soaked chilies, red tomatoes, garlic, and onion. Blend until smooth and set aside.
- In a skillet over medium-high heat, cook the marinated beef for about 4-5 minutes per side or until it reaches your desired doneness. Remove from heat and let rest for a few minutes before slicing thinly.
- In the same skillet, pour in the salsa roja and simmer for about 5 minutes, allowing the flavors to meld.
- Warm the corn tortillas in a separate pan or directly over the flame until pliable.
- To serve, place sliced beef on each tortilla, top with salsa roja, and sprinkle with chopped cilantro. Serve with lime wedges on the side.
