  • Red tomatoes - 200 grams
  • Dried guajillo chilies - 2 pieces
  • Garlic - 2 cloves
  • Onion - 1 small
  • Cilantro - 2 tablespoons, chopped
  • Lime - 1, for serving

Steps

  1. Start by marinating the beef. Rub the flank or skirt steak with olive oil, salt, and black pepper. Let it sit for 15 minutes.
  2. While the beef marinates, prepare the salsa roja. Remove the stems and seeds from the guajillo chilies and soak them in hot water for 10 minutes until softened.
  3. In a blender, combine the soaked chilies, red tomatoes, garlic, and onion. Blend until smooth and set aside.
  4. In a skillet over medium-high heat, cook the marinated beef for about 4-5 minutes per side or until it reaches your desired doneness. Remove from heat and let rest for a few minutes before slicing thinly.
  5. In the same skillet, pour in the salsa roja and simmer for about 5 minutes, allowing the flavors to meld.
  6. Warm the corn tortillas in a separate pan or directly over the flame until pliable.
