Ingredients

  • Beef flank steak - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 1/4 cup, chopped
  • Tomatillos - 200 grams, husked and quartered
  • Jalapeño - 1, seeded and chopped
  • Lime juice - 2 tablespoons
  • Avocado - 1, sliced
  • Radishes - 4, thinly sliced
  • Corn tortillas (keto-friendly) - 4 pieces

Steps

  1. In a bowl, mix olive oil, garlic powder, cumin, salt, and black pepper. Marinate the beef flank steak in this mixture for at least 15 minutes.
  2. While the beef is marinating, prepare the tomatillo salsa. In a blender, combine tomatillos, jalapeño, cilantro, and lime juice. Blend until smooth and set aside.
  3. Heat a grill or skillet over medium-high heat. Cook the marinated beef for about 4-5 minutes on each side, or until it reaches your desired level of doneness.
  4. Remove the beef from the grill and let it rest for 5 minutes before slicing it thinly against the grain.
  5. In the meantime, warm the keto-friendly corn tortillas on a hot skillet for about 30 seconds on each side until pliable.
  6. Assemble the tacos by placing sliced beef on each tortilla, topping with tomatillo salsa, avocado slices, and radish slices.
  7. Serve immediately and enjoy your Tacos de Res con Salsa de Tomatillo.
