- Corn tortillas - 4
- Avocado - 1 medium
- Lime - 1 medium
- Cilantro - 2 tablespoons, chopped
- Tomato - 1 small, diced
- Red onion - 1/4 small, diced
- Jalapeño - 1 small, diced (optional)
Steps
- In a bowl, combine olive oil, garlic powder, cumin, paprika, salt, and black pepper to create a marinade.
- Slice the beef flank steak against the grain into thin strips and add to the marinade, ensuring the beef is well coated. Let it marinate for at least 15 minutes.
- While the beef is marinating, prepare the avocado salsa. In a mixing bowl, mash the avocado and add the juice of the lime, chopped cilantro, diced tomato, diced red onion, and diced jalapeño (if using). Mix well and set aside.
