Ingredients

  • Beef flank steak - 300 grams
  • Corn tortillas - 4 pieces
  • Vegetable oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Dried ancho chilies - 2, seeds removed and soaked in hot water
  • Dried pasilla chilies - 1, seeds removed and soaked in hot water
  • Tomato - 1 medium, chopped
  • Chicken broth (halal) - 200 ml
  • Peanut butter - 1 tablespoon
  • Cinnamon - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Fresh cilantro - for garnish
  • Lime wedges - for serving

Steps

  1. In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.
  2. Add the soaked ancho and pasilla chilies to the skillet, along with the chopped tomato. Cook for about 5 minutes until softened.
  3. Transfer the mixture to a blender, add chicken broth, peanut butter, cinnamon, cumin, salt, and pepper. Blend until smooth to create the mole sauce.
  4. In the same skillet, heat the remaining tablespoon of oil over medium-high heat. Season the beef flank steak with salt and pepper, then sear for 3-4 minutes on each side until browned.
  5. Reduce the heat to low, pour the mole sauce over the beef, cover, and let simmer for 20-25 minutes until the beef is tender.
  6. Once cooked, remove the beef from the skillet and let it rest for a few minutes. Shred the beef using two forks.
  7. Warm the corn tortillas in a dry skillet or microwave. Assemble the tacos by adding shredded beef and topping with fresh cilantro.
  8. Serve with lime wedges on the side for an extra burst of flavor.
