- Beef flank steak - 300 grams
- Pineapple - 100 grams, diced
- Onion - 1 medium, finely chopped
- Cilantro - 2 tablespoons, chopped
- Corn tortillas - 4 pieces
- Lime - 1, cut into wedges
- Garlic - 2 cloves, minced
- Chili powder - 1 teaspoon
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
Steps
- In a bowl, combine olive oil, minced garlic, chili powder, cumin, oregano, salt, and black pepper to create a marinade.
- Add the beef flank steak to the marinade and coat well. Cover and refrigerate for at least 30 minutes.
- Preheat a grill or skillet over medium-high heat. Remove the beef from the marinade and cook for about 5-7 minutes on each side or until desired doneness is reached.
- Once cooked, remove the beef from the heat and let it rest for 5 minutes before slicing it thinly against the grain.
- In the same skillet, add the diced pineapple and sauté for 2-3 minutes until caramelized.
- Warm the corn tortillas in a dry skillet for about 30 seconds on each side.
- Assemble the tacos by placing sliced beef and sautéed pineapple on each tortilla. Top with chopped onion and cilantro.
- Serve with lime wedges on the side.
