Ingredients

  • Beef flank steak - 300 grams
  • Pineapple - 100 grams, diced
  • Onion - 1 medium, finely chopped
  • Cilantro - 2 tablespoons, chopped
  • Corn tortillas - 4 pieces
  • Lime - 1, cut into wedges
  • Garlic - 2 cloves, minced
  • Chili powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. In a bowl, combine olive oil, minced garlic, chili powder, cumin, oregano, salt, and black pepper to create a marinade.
  2. Add the beef flank steak to the marinade and coat well. Cover and refrigerate for at least 30 minutes.
  3. Preheat a grill or skillet over medium-high heat. Remove the beef from the marinade and cook for about 5-7 minutes on each side or until desired doneness is reached.
  4. Once cooked, remove the beef from the heat and let it rest for 5 minutes before slicing it thinly against the grain.
  5. In the same skillet, add the diced pineapple and sauté for 2-3 minutes until caramelized.
  6. Warm the corn tortillas in a dry skillet for about 30 seconds on each side.
  7. Assemble the tacos by placing sliced beef and sautéed pineapple on each tortilla. Top with chopped onion and cilantro.
  8. Serve with lime wedges on the side.
