Ingredients
- Beef flank steak - 250 grams
- Cilantro - 1 cup, tightly packed
- Garlic - 2 cloves
- Lime juice - 2 tablespoons
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Corn tortillas - 4 pieces
- Onion - 1/2, diced
- Radishes - 4, thinly sliced
- Salsa verde - 1/4 cup
Steps
- In a blender, combine cilantro, garlic, lime juice, olive oil, cumin, salt, and black pepper. Blend until smooth to create the marinade.
- Place the beef flank steak in a shallow dish and pour the marinade over it. Ensure the beef is well coated. Cover and marinate in the refrigerator for at least 15 minutes.
- Heat a grill or skillet over medium-high heat. Remove the beef from the marinade and cook for 4-5 minutes on each side, or until it reaches your desired doneness.
- Once cooked, let the beef rest for 5 minutes before slicing it thinly against the grain.
- While the beef is resting, warm the corn tortillas on a dry skillet for about 30 seconds on each side.
- Assemble the tacos by placing sliced beef on each tortilla and topping with diced onion, radishes, and a drizzle of salsa verde.
- Serve immediately and enjoy your Tacos de Res al Cilantro!
