- Vegetable broth - 250 ml
- Black beans - 100 grams, drained and rinsed
- Corn - 100 grams, frozen or fresh
- Red bell pepper - 1 medium, diced
- Red onion - 1 small, diced
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Corn tortillas - 4 small
- Fresh cilantro - for garnish
- Lime - 1, cut into wedges
Steps
- Rinse the quinoa under cold water and then combine it with vegetable broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until the quinoa is fluffy and the liquid is absorbed.
- While the quinoa cooks, heat olive oil in a skillet over medium heat. Add the diced red onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Stir in the diced red bell pepper, corn, black beans, cumin, smoked paprika, salt, and pepper. Cook for another 5-7 minutes until the vegetables are tender.
- Once the quinoa is cooked, fluff it with a fork and mix it into the skillet with the vegetable mixture. Adjust seasoning if necessary.
- Warm the corn tortillas in a dry skillet or microwave. Layer the quinoa mixture onto each tortilla.
- Garnish with fresh cilantro and serve with lime wedges on the side.
