Ingredients

  • Quinoa - 100 grams
  • Vegetable broth - 250 ml
  • Black beans - 100 grams, drained and rinsed
  • Corn - 100 grams, frozen or fresh
  • Red bell pepper - 1 medium, diced
  • Red onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Corn tortillas - 4 small
  • Fresh cilantro - for garnish
  • Lime - 1, cut into wedges

Steps

  1. Rinse the quinoa under cold water and then combine it with vegetable broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until the quinoa is fluffy and the liquid is absorbed.
  2. While the quinoa cooks, heat olive oil in a skillet over medium heat. Add the diced red onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Stir in the diced red bell pepper, corn, black beans, cumin, smoked paprika, salt, and pepper. Cook for another 5-7 minutes until the vegetables are tender.
  4. Once the quinoa is cooked, fluff it with a fork and mix it into the skillet with the vegetable mixture. Adjust seasoning if necessary.
  5. Warm the corn tortillas in a dry skillet or microwave. Layer the quinoa mixture onto each tortilla.
  6. Garnish with fresh cilantro and serve with lime wedges on the side.
