Tacos de Puerro

- Leeks - 2 medium-sized
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Corn tortillas - 4 small
- Fresh cilantro - 1/4 cup, chopped
- Lime - 1, cut into wedges
Steps
- Trim the roots and dark green tops from the leeks, then slice them in half lengthwise and rinse thoroughly to remove any dirt.
- Slice the leeks into thin half-moons.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced leeks to the skillet, along with the ground cumin, salt, and black pepper. Cook for about 10-12 minutes, stirring occasionally, until the leeks are soft and slightly caramelized.
- While the leeks are cooking, warm the corn tortillas in a separate skillet or microwave until pliable.
- Once the leeks are cooked, remove them from heat and assemble the tacos by placing a generous amount of the leek mixture on each tortilla.
- Top with freshly chopped cilantro and serve with lime wedges on the side.
