  • Leeks - 2 medium-sized
  • Olive oil - 2 tablespoons

  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Corn tortillas - 4 small
  • Fresh cilantro - 1/4 cup, chopped
  • Lime - 1, cut into wedges

Steps

  1. Trim the roots and dark green tops from the leeks, then slice them in half lengthwise and rinse thoroughly to remove any dirt.
  2. Slice the leeks into thin half-moons.
  3. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the sliced leeks to the skillet, along with the ground cumin, salt, and black pepper. Cook for about 10-12 minutes, stirring occasionally, until the leeks are soft and slightly caramelized.
  5. While the leeks are cooking, warm the corn tortillas in a separate skillet or microwave until pliable.
  6. Once the leeks are cooked, remove them from heat and assemble the tacos by placing a generous amount of the leek mixture on each tortilla.
  7. Top with freshly chopped cilantro and serve with lime wedges on the side.
