  • Tomatillos - 200 grams
  • Fresh cilantro - 30 grams
  • Jalapeño pepper - 1 medium
  • Garlic - 2 cloves
  • Onion - 1 small
  • Lime - 1
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Corn tortillas - 4 small

Steps

  1. Start by preparing the salsa verde: husk the tomatillos and rinse them under warm water. Place them in a pot of boiling water and cook for 5-7 minutes until soft.
  2. In a blender, combine the cooked tomatillos, cilantro, jalapeño (seeded for less heat if desired), garlic, and half of the onion. Blend until smooth and season with salt and pepper to taste.
  3. Cut the pork shoulder into small chunks and season with salt, pepper, and the juice of half a lime.
  4. In a large skillet, heat the olive oil over medium heat. Add the remaining onion, diced, and sauté until translucent, about 3-4 minutes.
  5. Add the pork to the skillet and cook for about 10-12 minutes until browned on all sides.
  6. Pour the salsa verde over the pork, cover, and simmer on low heat for 30-35 minutes until the pork is tender.
  7. While the pork is cooking, warm the corn tortillas on a dry skillet for about 1 minute on each side.
  8. Once the pork is ready, assemble the tacos by placing a portion of the pork mixture on each tortilla. Garnish with fresh cilantro and a squeeze of lime juice before serving.
