- Onion - 1 small
- Lime - 1
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Corn tortillas - 4 small
Steps
- Start by preparing the salsa verde: husk the tomatillos and rinse them under warm water. Place them in a pot of boiling water and cook for 5-7 minutes until soft.
- In a blender, combine the cooked tomatillos, cilantro, jalapeño (seeded for less heat if desired), garlic, and half of the onion. Blend until smooth and season with salt and pepper to taste.
- Cut the pork shoulder into small chunks and season with salt, pepper, and the juice of half a lime.
- In a large skillet, heat the olive oil over medium heat. Add the remaining onion, diced, and sauté until translucent, about 3-4 minutes.
- Add the pork to the skillet and cook for about 10-12 minutes until browned on all sides.
- Pour the salsa verde over the pork, cover, and simmer on low heat for 30-35 minutes until the pork is tender.
- While the pork is cooking, warm the corn tortillas on a dry skillet for about 1 minute on each side.
- Once the pork is ready, assemble the tacos by placing a portion of the pork mixture on each tortilla. Garnish with fresh cilantro and a squeeze of lime juice before serving.
