- Pork shoulder - 300 grams, cut into small pieces
- Vegetable oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 small, diced
- Tomatoes - 3 medium, chopped
- Dried guajillo chiles - 3, seeds removed
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Corn tortillas - 4
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
Steps
- In a pot, heat the vegetable oil over medium heat. Add the diced onion and minced garlic, and sauté until the onions are translucent.
- Add the pork pieces to the pot and cook until browned on all sides, about 5-7 minutes.
- Meanwhile, in a separate bowl, soak the dried guajillo chiles in hot water for about 10 minutes until softened.
- Once softened, drain the chiles and blend them with the chopped tomatoes, cumin, oregano, salt, and black pepper until smooth.
- Pour the blended sauce over the browned pork in the pot. Add a bit of water if needed to cover the meat. Bring to a simmer, then reduce the heat to low, cover, and cook for about 30-40 minutes until the pork is tender.
- While the pork is cooking, warm the corn tortillas on a skillet over medium heat for about 30 seconds on each side.
- Once the pork is cooked, shred it with two forks and mix it well with the sauce.
- To serve, place a generous amount of the pork mixture on each tortilla, sprinkle with chopped cilantro, and serve with lime wedges on the side.
