  • Pork shoulder - 300 grams, cut into small pieces
  • Vegetable oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 small, diced
  • Tomatoes - 3 medium, chopped
  • Dried guajillo chiles - 3, seeds removed
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Corn tortillas - 4
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, cut into wedges

Steps

  1. In a pot, heat the vegetable oil over medium heat. Add the diced onion and minced garlic, and sauté until the onions are translucent.
  2. Add the pork pieces to the pot and cook until browned on all sides, about 5-7 minutes.
  3. Meanwhile, in a separate bowl, soak the dried guajillo chiles in hot water for about 10 minutes until softened.
  4. Once softened, drain the chiles and blend them with the chopped tomatoes, cumin, oregano, salt, and black pepper until smooth.
  5. Pour the blended sauce over the browned pork in the pot. Add a bit of water if needed to cover the meat. Bring to a simmer, then reduce the heat to low, cover, and cook for about 30-40 minutes until the pork is tender.
  6. While the pork is cooking, warm the corn tortillas on a skillet over medium heat for about 30 seconds on each side.
  7. Once the pork is cooked, shred it with two forks and mix it well with the sauce.
  8. To serve, place a generous amount of the pork mixture on each tortilla, sprinkle with chopped cilantro, and serve with lime wedges on the side.
