- Tomato - 2 medium, chopped
- Green bell pepper - 1, chopped
- Dried oregano - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Corn tortillas - 4 small
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
Steps
- In a large skillet, heat the olive oil over medium heat. Add the diced pork and cook until browned on all sides, about 10 minutes.
- Add the chopped onion and garlic to the skillet, cooking until the onion is translucent, about 5 minutes.
- Stir in the chopped tomatoes, green bell pepper, oregano, cumin, salt, and black pepper. Mix well.
- Cover and reduce heat to low. Let the mixture simmer for 25-30 minutes, stirring occasionally, until the pork is tender and fully cooked.
- While the pork cooks, warm the corn tortillas in a separate skillet over medium heat for about 1 minute on each side.
- Once the pork is cooked, assemble the tacos by placing a portion of the pork mixture onto each tortilla. Top with fresh cilantro and serve with lime wedges.
