  • Tomato - 2 medium, chopped
  • Green bell pepper - 1, chopped
  • Dried oregano - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Corn tortillas - 4 small
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, cut into wedges

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the diced pork and cook until browned on all sides, about 10 minutes.
  2. Add the chopped onion and garlic to the skillet, cooking until the onion is translucent, about 5 minutes.
  3. Stir in the chopped tomatoes, green bell pepper, oregano, cumin, salt, and black pepper. Mix well.
  4. Cover and reduce heat to low. Let the mixture simmer for 25-30 minutes, stirring occasionally, until the pork is tender and fully cooked.
  5. While the pork cooks, warm the corn tortillas in a separate skillet over medium heat for about 1 minute on each side.
