- Pork shoulder - 300 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Corn tortillas - 4 pieces
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
- Tomatillos - 200 grams, husked and quartered
- Jalapeño - 1, stemmed and chopped
- Onion - 1/2, chopped
- Water - 240 ml
Steps
- In a pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
- Add the pork shoulder to the pot and brown it on all sides.
- Sprinkle the cumin, oregano, salt, and black pepper over the pork. Stir to coat the meat evenly.
- Pour in 240 ml of water, bring to a simmer, cover, and cook for about 30 minutes until the pork is tender.
- While the pork is cooking, prepare the salsa verde. In a separate pot, add tomatillos, jalapeño, onion, and enough water to cover. Bring to a boil and cook for 10 minutes until softened.
- Drain the tomatillo mixture and transfer it to a blender. Blend until smooth, then adjust seasoning if necessary.
- Once the pork is cooked, shred it using two forks and set aside.
- Warm the corn tortillas in a skillet or microwave until pliable.
- To assemble, place a portion of the shredded pork on each tortilla, top with salsa verde, and sprinkle with chopped cilantro.
- Serve with lime wedges on the side.
