- Cumin - 1 teaspoon
- Paprika - 1 teaspoon

- Water - 200 milliliters
- Corn tortillas (keto-friendly) - 4 pieces
- Dried árbol chiles - 5 pieces
- Tomato - 1 medium, chopped
- Onion - 1/2 medium, chopped
- Lime - 1, juiced
- Fresh cilantro - 2 tablespoons, chopped
Steps
- 1. Cut the pork shoulder into small cubes and season with garlic powder, cumin, paprika, salt, and black pepper.
- 2. In a large skillet, heat olive oil over medium heat and add the seasoned pork. Sear until browned on all sides, about 5-7 minutes.
- 3. Add water to the skillet, cover, and reduce heat to low. Simmer for about 45 minutes, or until the pork is tender and cooked through.
- 4. While the pork is cooking, prepare the salsa. In a dry skillet, toast the dried árbol chiles over medium heat for about 2 minutes until fragrant. Be careful not to burn them.
- 5. Remove the toasted chiles and blend them with the chopped tomato, onion, and lime juice in a blender until smooth.
- 6. Once the pork is done, shred it using two forks and mix it with the prepared salsa.
- 7. Warm the keto-friendly corn tortillas in a pan for about 30 seconds on each side.
