Ingredients

  • Pork shoulder - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 200 milliliters
  • Corn tortillas (keto-friendly) - 4 pieces
  • Dried árbol chiles - 5 pieces
  • Tomato - 1 medium, chopped
  • Onion - 1/2 medium, chopped
  • Lime - 1, juiced
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. 1. Cut the pork shoulder into small cubes and season with garlic powder, cumin, paprika, salt, and black pepper.
  2. 2. In a large skillet, heat olive oil over medium heat and add the seasoned pork. Sear until browned on all sides, about 5-7 minutes.
  3. 3. Add water to the skillet, cover, and reduce heat to low. Simmer for about 45 minutes, or until the pork is tender and cooked through.
  4. 4. While the pork is cooking, prepare the salsa. In a dry skillet, toast the dried árbol chiles over medium heat for about 2 minutes until fragrant. Be careful not to burn them.
  5. 5. Remove the toasted chiles and blend them with the chopped tomato, onion, and lime juice in a blender until smooth.
  6. 6. Once the pork is done, shred it using two forks and mix it with the prepared salsa.
  7. 7. Warm the keto-friendly corn tortillas in a pan for about 30 seconds on each side.
  8. 8. Assemble the tacos by placing the shredded pork mixture onto each tortilla and garnish with fresh cilantro.
