Steps
- Preheat your oven to 180°C (350°F).
- In a large mixing bowl, combine the olive oil, minced garlic, chopped onion, cumin, paprika, oregano, salt, and black pepper to create a marinade.
- Cut the pork shoulder into bite-sized pieces and add it to the marinade, ensuring all pieces are well-coated. Allow it to marinate for at least 30 minutes.
- Transfer the marinated pork to a baking dish and cover it with aluminum foil. Bake in the preheated oven for 40 minutes.
- After 40 minutes, remove the foil and bake for an additional 10-15 minutes, allowing the pork to brown slightly.
- While the pork is baking, warm the corn tortillas in a skillet over medium heat until soft and pliable.
- Once the pork is done, remove it from the oven and let it rest for a few minutes before shredding it with forks.
- Assemble the tacos by placing a generous amount of shredded pork on each tortilla. Top with chopped cilantro, avocado slices, and radishes.
- Serve with lime wedges on the side for squeezing over the tacos.
