- Fresh cilantro - 30 grams, chopped
- Lime - 1, juiced
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Ground black pepper - 1/2 teaspoon
- Corn tortillas - 4 small
- Avocado - 1, sliced (for topping)
Steps
- 1. Preheat a skillet over medium heat and add 1 tablespoon of olive oil.
- 2. Season the chicken breast with salt and pepper, then cook in the skillet for about 6-7 minutes on each side until fully cooked. Remove from heat and let it rest.
- 3. In the same skillet, add another tablespoon of olive oil, then sauté the chopped onion until translucent, about 3-4 minutes.
- 4. Add the tomatillos and green chili to the skillet, cooking for an additional 5-7 minutes until the tomatillos soften.
- 5. Remove the skillet from heat and transfer the tomatillo mixture to a blender. Add chopped cilantro and lime juice, then blend until smooth.
- 6. Shred the cooked chicken and mix it with half of the salsa verde.
- 7. Warm the corn tortillas in a dry skillet for about 30 seconds on each side.
- 8. Assemble the tacos by placing the chicken mixture on the tortillas, drizzling with more salsa verde, and topping with avocado slices.
