- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Tomatoes - 2 medium, chopped
- Chipotle chili in adobo sauce - 1 tablespoon
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Corn tortillas - 4 small
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
Steps
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and diced chicken to the skillet. Cook until the chicken is browned and cooked through, about 7-10 minutes.
- Stir in the chopped tomatoes, chipotle chili, cumin, oregano, salt, and black pepper. Cook for another 5-7 minutes until the tomatoes break down and create a sauce.
- While the chicken mixture is cooking, warm the corn tortillas in a separate pan or on a griddle for about 1-2 minutes per side until pliable.
- To serve, place a generous amount of the chicken mixture on each tortilla, top with chopped cilantro, and serve with lime wedges on the side.
