- Corn tortillas - 4 pieces
- Fresh cilantro - 2 tablespoons, chopped
- Red onion - 1/4 small, thinly sliced
- Lime - 1, cut into wedges
- Avocado - 1/2, sliced
Steps
- In a bowl, combine olive oil, ground cumin, paprika, garlic powder, salt, and black pepper to create a marinade.
- Cut the chicken breast into thin strips and add them to the marinade, ensuring they are well coated. Let it marinate for at least 15 minutes.
- Heat a grill pan or skillet over medium-high heat. Once hot, add the marinated chicken strips and cook for about 5-7 minutes, turning occasionally until fully cooked and slightly charred.
- While the chicken is cooking, warm the corn tortillas on a separate pan for about 30 seconds on each side until pliable.
- Once the chicken is cooked, remove it from the heat and let it rest for a couple of minutes before slicing it into bite-sized pieces.
- To assemble, place a few pieces of grilled chicken on each tortilla, and top with chopped cilantro, sliced red onion, and avocado.
- Serve immediately with lime wedges on the side for squeezing over the tacos.
