- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 1/4 cup (chopped)
- Avocado - 1 medium (sliced)
- Lime - 1 (cut into wedges)
Steps
- Preheat your oven to 200°C (400°F).
- In a large bowl, combine the sliced bell peppers, minced garlic, olive oil, cumin, paprika, salt, and black pepper. Toss until the peppers are well coated.
- Spread the bell pepper mixture onto a baking sheet in a single layer and roast in the oven for 20 minutes, or until the peppers are tender and slightly charred.
- While the peppers are roasting, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
- Once the peppers are done, remove them from the oven and stir in the chopped cilantro.
- To assemble the tacos, place a generous portion of the roasted bell pepper mixture on each tortilla, top with slices of avocado, and serve with lime wedges on the side.
