  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 1/4 cup (chopped)
  • Avocado - 1 medium (sliced)
  • Lime - 1 (cut into wedges)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, combine the sliced bell peppers, minced garlic, olive oil, cumin, paprika, salt, and black pepper. Toss until the peppers are well coated.
  3. Spread the bell pepper mixture onto a baking sheet in a single layer and roast in the oven for 20 minutes, or until the peppers are tender and slightly charred.
  4. While the peppers are roasting, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
  5. Once the peppers are done, remove them from the oven and stir in the chopped cilantro.
  6. To assemble the tacos, place a generous portion of the roasted bell pepper mixture on each tortilla, top with slices of avocado, and serve with lime wedges on the side.
