Ingredients

  • Pork shoulder - 500 grams
  • Achiote paste - 50 grams
  • Orange juice - 100 ml
  • Lime juice - 30 ml
  • Garlic - 3 cloves, minced
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Banana leaves - 2 large pieces (or aluminum foil if unavailable)
  • Corn tortillas - 4 pieces
  • Red onion - 1 small, thinly sliced
  • Cilantro - 1/4 cup, chopped
  • Radishes - 4, thinly sliced

Steps

  1. In a bowl, mix the achiote paste, orange juice, lime juice, minced garlic, oregano, salt, and black pepper to create a marinade.
  2. Cut the pork shoulder into large chunks and coat it evenly with the marinade. Cover and refrigerate for at least 2 hours or overnight for best flavor.
  3. Preheat your oven to 150°C (300°F).
  4. Line a baking dish with banana leaves (or aluminum foil). Place the marinated pork on the leaves and wrap them securely, then cover the dish with more banana leaves or foil.
  5. Bake in the preheated oven for about 3 hours, or until the pork is tender and easily shredded.
  6. Once cooked, remove the pork from the oven and let it rest for 10 minutes. Then, shred the meat using two forks.
  7. While the pork rests, warm the corn tortillas on a skillet over medium heat until pliable.
  8. Assemble the tacos by placing a generous amount of shredded pork on each tortilla. Top with sliced red onion, chopped cilantro, and radish slices.
  9. Serve immediately with lime wedges on the side.
