Ingredients
- Pork shoulder - 500 grams
- Achiote paste - 50 grams
- Orange juice - 100 ml
- Lime juice - 30 ml
- Garlic - 3 cloves, minced
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Banana leaves - 2 large pieces (or aluminum foil if unavailable)
- Corn tortillas - 4 pieces
- Red onion - 1 small, thinly sliced
- Cilantro - 1/4 cup, chopped
- Radishes - 4, thinly sliced
Steps
- In a bowl, mix the achiote paste, orange juice, lime juice, minced garlic, oregano, salt, and black pepper to create a marinade.
- Cut the pork shoulder into large chunks and coat it evenly with the marinade. Cover and refrigerate for at least 2 hours or overnight for best flavor.
- Preheat your oven to 150°C (300°F).
- Line a baking dish with banana leaves (or aluminum foil). Place the marinated pork on the leaves and wrap them securely, then cover the dish with more banana leaves or foil.
- Bake in the preheated oven for about 3 hours, or until the pork is tender and easily shredded.
- Once cooked, remove the pork from the oven and let it rest for 10 minutes. Then, shred the meat using two forks.
- While the pork rests, warm the corn tortillas on a skillet over medium heat until pliable.
- Assemble the tacos by placing a generous amount of shredded pork on each tortilla. Top with sliced red onion, chopped cilantro, and radish slices.
- Serve immediately with lime wedges on the side.
