Steps
- Preheat the oven to 180°C (350°F).
- Season the duck breasts with salt and black pepper on both sides.
- Heat olive oil in a skillet over medium heat. Place the duck breasts skin-side down and sear for about 5-7 minutes until the skin is crispy.
- Flip the duck breasts and transfer the skillet to the preheated oven. Roast for 15-20 minutes for medium-rare, or until desired doneness.
- While the duck is cooking, heat the mole sauce in a small saucepan over low heat until warmed through.
- Remove the duck from the oven and let it rest for 5 minutes before slicing it thinly.
- Warm the corn tortillas in a dry skillet or microwave until pliable.
