- Duck leg quarters - 2 pieces (about 500g)
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 250 ml
- Corn tortillas - 4 pieces
- Fresh cilantro - 1/4 cup, chopped
- Lime - 1, cut into wedges
- Pickled red onions - 1/2 cup (for garnish)
Steps
- Preheat your oven to 160°C (320°F).
- In a large bowl, mix olive oil, minced garlic, cumin, smoked paprika, oregano, salt, and black pepper to create a marinade.
- Rub the marinade all over the duck leg quarters, ensuring they are well coated. Let them marinate for at least 30 minutes.
- Place the marinated duck in a baking dish and pour the vegetable broth around it.
- Cover the baking dish with aluminum foil and roast in the preheated oven for about 90 minutes, or until the duck is tender and easily pulls apart.
- Once cooked, remove the foil and increase the oven temperature to 200°C (390°F).
- Roast for an additional 15-20 minutes to crisp up the skin.
- While the duck is roasting, warm the corn tortillas in a dry skillet over medium heat until pliable.
- Once the duck is ready, shred the meat with two forks and discard the bones.
- Assemble the tacos by placing shredded duck on each tortilla, topped with chopped cilantro, and serve with lime wedges and pickled red onions.
