Ingredients

  • Duck leg quarters - 2 pieces (about 500g)
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 250 ml
  • Corn tortillas - 4 pieces
  • Fresh cilantro - 1/4 cup, chopped
  • Lime - 1, cut into wedges
  • Pickled red onions - 1/2 cup (for garnish)

Steps

  1. Preheat your oven to 160°C (320°F).
  2. In a large bowl, mix olive oil, minced garlic, cumin, smoked paprika, oregano, salt, and black pepper to create a marinade.
  3. Rub the marinade all over the duck leg quarters, ensuring they are well coated. Let them marinate for at least 30 minutes.
  4. Place the marinated duck in a baking dish and pour the vegetable broth around it.
  5. Cover the baking dish with aluminum foil and roast in the preheated oven for about 90 minutes, or until the duck is tender and easily pulls apart.
  6. Once cooked, remove the foil and increase the oven temperature to 200°C (390°F).
  7. Roast for an additional 15-20 minutes to crisp up the skin.
  8. While the duck is roasting, warm the corn tortillas in a dry skillet over medium heat until pliable.
  9. Once the duck is ready, shred the meat with two forks and discard the bones.
  10. Assemble the tacos by placing shredded duck on each tortilla, topped with chopped cilantro, and serve with lime wedges and pickled red onions.
