Steps
- Peel and chop the potatoes into small cubes, then boil them in salted water for about 15 minutes or until tender.
- Drain the potatoes and let them cool slightly before mashing them in a bowl.
- Add the chopped green onions, cilantro, salt, and black pepper to the mashed potatoes, mixing well until fully combined.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Form small patties from the potato mixture and cook for 4-5 minutes on each side until golden and crispy. Repeat with remaining oil and mixture.
- Warm the corn tortillas in a separate skillet or microwave until pliable.
- Serve the crispy potato patties in the warm tortillas, garnished with lime wedges and additional cilantro if desired.
