Ingredients

  • Olive oil - 2 tablespoons

  • Black pepper - 1/2 teaspoon
  • Lime - 1, cut into wedges

Steps

  1. Peel and chop the potatoes into small cubes, then boil them in salted water for about 15 minutes or until tender.
  2. Drain the potatoes and let them cool slightly before mashing them in a bowl.
  3. Add the chopped green onions, cilantro, salt, and black pepper to the mashed potatoes, mixing well until fully combined.
  4. In a skillet, heat 1 tablespoon of olive oil over medium heat. Form small patties from the potato mixture and cook for 4-5 minutes on each side until golden and crispy. Repeat with remaining oil and mixture.
  5. Warm the corn tortillas in a separate skillet or microwave until pliable.
  6. Serve the crispy potato patties in the warm tortillas, garnished with lime wedges and additional cilantro if desired.
