  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Corn tortillas - 4 small
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, cut into wedges
  • Salsa (store-bought or homemade) - 100 grams

Steps

  1. Peel and dice the potatoes into small cubes.
  2. In a medium pot, boil the diced potatoes in salted water for about 10-12 minutes until tender. Drain and let cool slightly.

  4. While the potatoes are cooking, warm the corn tortillas in a separate skillet over low heat for about 30 seconds on each side until pliable.
  5. To assemble, place a generous spoonful of the potato mixture onto each tortilla, top with fresh cilantro, and serve with lime wedges and salsa on the side.
