- Corn tortillas - 4 small
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
- Salsa (store-bought or homemade) - 100 grams
Steps
- Peel and dice the potatoes into small cubes.
- In a medium pot, boil the diced potatoes in salted water for about 10-12 minutes until tender. Drain and let cool slightly.
- In a skillet, heat the olive oil over medium heat. Add the boiled potatoes, garlic powder, cumin, salt, and black pepper. Mash the potatoes slightly with a fork and sauté for about 5-7 minutes until they start to turn golden and crispy.
- While the potatoes are cooking, warm the corn tortillas in a separate skillet over low heat for about 30 seconds on each side until pliable.
- To assemble, place a generous spoonful of the potato mixture onto each tortilla, top with fresh cilantro, and serve with lime wedges and salsa on the side.
