Ingredients
- Halal chicken thighs - 300 grams
- Corn tortillas - 4 pieces
- Mole sauce - 100 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium bowl, season the Halal chicken thighs with salt and black pepper.
- Heat olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the seasoned chicken thighs to the skillet and cook for about 5 minutes on each side, or until golden brown.
- Pour the mole sauce over the chicken and reduce the heat to low. Cover and let it simmer for 20 minutes, or until the chicken is fully cooked and tender.
- While the chicken is cooking, warm the corn tortillas in a separate skillet for about 30 seconds on each side.
- Once the chicken is done, shred it using two forks in the skillet, mixing it with the mole sauce.
- To assemble the tacos, fill each tortilla with the shredded chicken mole mixture.
- Garnish with chopped cilantro and serve with lime wedges on the side.
