Ingredients

  • Halal chicken thighs - 300 grams
  • Corn tortillas - 4 pieces
  • Mole sauce - 100 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, cut into wedges
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium bowl, season the Halal chicken thighs with salt and black pepper.
  2. Heat olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  3. Add the seasoned chicken thighs to the skillet and cook for about 5 minutes on each side, or until golden brown.
  4. Pour the mole sauce over the chicken and reduce the heat to low. Cover and let it simmer for 20 minutes, or until the chicken is fully cooked and tender.
  5. While the chicken is cooking, warm the corn tortillas in a separate skillet for about 30 seconds on each side.
  6. Once the chicken is done, shred it using two forks in the skillet, mixing it with the mole sauce.
  7. To assemble the tacos, fill each tortilla with the shredded chicken mole mixture.
  8. Garnish with chopped cilantro and serve with lime wedges on the side.
