Ingredients

  • Lentils - 150 grams
  • Corn tortillas - 4 pieces

  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Vegetable broth - 300 ml
  • Tomato - 1 medium, diced
  • Cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Avocado - 1, sliced
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat and add the chopped onion and minced garlic. Sauté until translucent, about 3-4 minutes.
  3. Add the cumin and smoked paprika to the onion mixture, stirring for an additional minute to release the spices' aroma.
  4. Stir in the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes or until lentils are tender and most of the liquid is absorbed.
  5. Season with salt, pepper, and lime juice, adjusting to taste.
  6. While the lentils are cooking, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.
  7. To assemble the tacos, place a generous spoonful of the lentil mixture in each tortilla and top with diced tomato, avocado slices, and chopped cilantro.
  8. Serve immediately with lime wedges on the side.
