- Vegetable broth - 300 ml
- Tomato - 1 medium, diced
- Cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Avocado - 1, sliced
- Salt - to taste

Steps
- Rinse the lentils under cold water and set aside.
- In a medium saucepan, heat the olive oil over medium heat and add the chopped onion and minced garlic. Sauté until translucent, about 3-4 minutes.
- Add the cumin and smoked paprika to the onion mixture, stirring for an additional minute to release the spices' aroma.
- Stir in the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes or until lentils are tender and most of the liquid is absorbed.
- Season with salt, pepper, and lime juice, adjusting to taste.
- While the lentils are cooking, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.
- To assemble the tacos, place a generous spoonful of the lentil mixture in each tortilla and top with diced tomato, avocado slices, and chopped cilantro.
- Serve immediately with lime wedges on the side.
