Ingredients

  • Beef tongue - 500 grams
  • Corn tortillas - 4 pieces
  • Onion - 1 small, finely chopped
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, cut into wedges
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic cloves - 2, minced
  • Bay leaves - 2
  • Water - 1 liter

Steps

  1. Rinse the beef tongue under cold water and place it in a large pot.
  2. Add 1 liter of water, bay leaves, garlic, salt, and black pepper to the pot.
  3. Bring the water to a boil, then reduce the heat to low and cover. Simmer for about 2 to 2.5 hours, or until the tongue is tender.
  4. Once cooked, remove the tongue from the pot and let it cool for a few minutes. Peel off the outer layer of the tongue skin.
  5. Chop the tongue into small, bite-sized pieces.
  6. In a skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.
  7. Assemble the tacos by placing a portion of the chopped beef tongue on each tortilla. Top with chopped onions and cilantro.
  8. Serve with lime wedges on the side for squeezing over the tacos.
