Ingredients
- Beef tongue - 500 grams
- Corn tortillas - 4 pieces
- Onion - 1 small, finely chopped
- Cilantro - 1/4 cup, chopped
- Lime - 1, cut into wedges
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Garlic cloves - 2, minced
- Bay leaves - 2
- Water - 1 liter
Steps
- Rinse the beef tongue under cold water and place it in a large pot.
- Add 1 liter of water, bay leaves, garlic, salt, and black pepper to the pot.
- Bring the water to a boil, then reduce the heat to low and cover. Simmer for about 2 to 2.5 hours, or until the tongue is tender.
- Once cooked, remove the tongue from the pot and let it cool for a few minutes. Peel off the outer layer of the tongue skin.
- Chop the tongue into small, bite-sized pieces.
- In a skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.
- Assemble the tacos by placing a portion of the chopped beef tongue on each tortilla. Top with chopped onions and cilantro.
- Serve with lime wedges on the side for squeezing over the tacos.
