- Ripe tomatoes - 500 grams
- Corn tortillas - 4 pieces
- Red onion - 50 grams
- Garlic - 2 cloves
- Fresh cilantro - 30 grams
- Olive oil - 2 tablespoons
- Lime - 1 unit
- Salt - to taste
- Black pepper - to taste
- Avocado - 1 unit
Steps
- Preheat the oven to 200°C (400°F).
- Wash and cut the tomatoes in half, placing them on a baking tray.
- Mince the garlic and sprinkle over the tomatoes, then drizzle with olive oil, and season with salt and pepper.
- Roast the tomatoes in the oven for 20 minutes until they are soft and slightly caramelized.
- While the tomatoes are roasting, finely chop the red onion and cilantro.
- In a small bowl, mix the onion, cilantro, and the juice of half a lime; set aside.
- Once the tomatoes are done, remove them from the oven and allow to cool slightly.
- Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.
- Assemble the tacos by placing the roasted tomatoes on the tortillas, adding the onion-cilantro mixture on top.
- Slice the avocado and add a few slices to each taco, then drizzle with more lime juice before serving.
