Ingredients

  • Ripe tomatoes - 500 grams
  • Corn tortillas - 4 pieces
  • Red onion - 50 grams
  • Garlic - 2 cloves
  • Fresh cilantro - 30 grams
  • Olive oil - 2 tablespoons
  • Lime - 1 unit
  • Salt - to taste
  • Black pepper - to taste
  • Avocado - 1 unit

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and cut the tomatoes in half, placing them on a baking tray.
  3. Mince the garlic and sprinkle over the tomatoes, then drizzle with olive oil, and season with salt and pepper.
  4. Roast the tomatoes in the oven for 20 minutes until they are soft and slightly caramelized.
  5. While the tomatoes are roasting, finely chop the red onion and cilantro.
  6. In a small bowl, mix the onion, cilantro, and the juice of half a lime; set aside.
  7. Once the tomatoes are done, remove them from the oven and allow to cool slightly.
  8. Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.
  9. Assemble the tacos by placing the roasted tomatoes on the tortillas, adding the onion-cilantro mixture on top.
  10. Slice the avocado and add a few slices to each taco, then drizzle with more lime juice before serving.
