  • Smoked paprika - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 100 ml
  • Corn tortillas - 4 small
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)
  • Lime - 1, cut into wedges (for serving)
  • Avocado - 1, sliced (for serving)

Steps

  1. In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Shred the drained jackfruit using your fingers or a fork, then add it to the skillet with the onions and garlic.
  4. Sprinkle in the cumin, smoked paprika, chili powder, salt, and black pepper. Stir well to combine and cook for 2-3 minutes.
  5. Pour in the vegetable broth, cover, and reduce the heat to low. Let it simmer for about 15 minutes, stirring occasionally until the jackfruit is tender and has absorbed the flavors.
  6. While the jackfruit is cooking, warm the corn tortillas in a separate skillet or microwave.
  7. Once the jackfruit mixture is ready, assemble the tacos by placing a generous amount of the jackfruit filling onto each tortilla.
  8. Top with chopped cilantro and slices of avocado. Serve with lime wedges on the side for squeezing over the tacos.
