- Cherry tomatoes - 100 grams, halved
- Avocado - 1 medium, diced
- Red onion - 1/4 cup, finely chopped
- Cilantro - 1/4 cup, chopped
- Lime - 1, juiced
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Peel the jícama and slice it into thin rounds, approximately 1/4 inch thick, to create taco 'shells'.
- In a bowl, combine the cooked chickpeas, halved cherry tomatoes, diced avocado, chopped red onion, and cilantro.
- Drizzle with lime juice and olive oil, then season with salt and black pepper to taste. Mix gently to combine without mashing the avocado.
- Take a jícama slice and spoon the chickpea mixture onto it, folding it slightly to form a taco shape.
