  • Jícama - 250 grams
  • Chickpeas - 1 cup cooked (150 grams)
  • Cherry tomatoes - 100 grams, halved
  • Avocado - 1 medium, diced
  • Red onion - 1/4 cup, finely chopped
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, juiced
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Peel the jícama and slice it into thin rounds, approximately 1/4 inch thick, to create taco 'shells'.
  2. In a bowl, combine the cooked chickpeas, halved cherry tomatoes, diced avocado, chopped red onion, and cilantro.
  3. Drizzle with lime juice and olive oil, then season with salt and black pepper to taste. Mix gently to combine without mashing the avocado.
  4. Take a jícama slice and spoon the chickpea mixture onto it, folding it slightly to form a taco shape.
  5. Repeat with the remaining jícama slices and filling, then serve immediately, garnished with extra cilantro if desired.
