Ingredients

  • Black beans - 200 grams (cooked and drained)
  • Corn tortillas - 4 small
  • Red onion - 50 grams (finely chopped)
  • Garlic - 1 clove (minced)
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste
  • Lime - 1 (juiced)
  • Fresh cilantro - 10 grams (chopped)
  • Avocado - 1 small (sliced)
  • Tomato - 1 medium (diced)
  • Salsa - 100 grams (optional)

Steps

  1. In a skillet, heat the olive oil over medium heat. Add the finely chopped red onion and minced garlic; sauté until the onion becomes translucent, about 3-4 minutes.
  2. Add the cooked black beans to the skillet along with cumin, chili powder, salt, and pepper. Stir well and cook for another 5 minutes, allowing the flavors to meld.
  3. In the meantime, warm the corn tortillas in a separate dry skillet over medium heat for about 30 seconds on each side until pliable.
  4. Once the bean mixture is heated through, remove from the heat and stir in the lime juice and chopped cilantro.
  5. To assemble the tacos, place a generous spoonful of the black bean mixture onto each tortilla. Top with diced tomato and avocado slices.
  6. Serve immediately, optionally with salsa on the side.
