- Red onion - 50 grams (finely chopped)
- Garlic - 1 clove (minced)
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Pepper - to taste
- Lime - 1 (juiced)
- Fresh cilantro - 10 grams (chopped)
- Avocado - 1 small (sliced)
- Tomato - 1 medium (diced)
- Salsa - 100 grams (optional)
Steps
- In a skillet, heat the olive oil over medium heat. Add the finely chopped red onion and minced garlic; sauté until the onion becomes translucent, about 3-4 minutes.
- Add the cooked black beans to the skillet along with cumin, chili powder, salt, and pepper. Stir well and cook for another 5 minutes, allowing the flavors to meld.
- In the meantime, warm the corn tortillas in a separate dry skillet over medium heat for about 30 seconds on each side until pliable.
- Once the bean mixture is heated through, remove from the heat and stir in the lime juice and chopped cilantro.
- To assemble the tacos, place a generous spoonful of the black bean mixture onto each tortilla. Top with diced tomato and avocado slices.
- Serve immediately, optionally with salsa on the side.
