- Black beans - 400 grams (canned, drained and rinsed)
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Corn tortillas - 4
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
Steps
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, cumin, smoked paprika, salt, and black pepper to the skillet. Stir and cook for another minute until fragrant.
- Add the drained black beans to the skillet, and mash them gently with a fork or potato masher, leaving some chunks for texture. Cook for about 5-7 minutes until heated through and creamy.
- While the beans are cooking, warm the corn tortillas in a separate skillet for about 30 seconds on each side until pliable.
- Once the beans are ready, remove them from heat. Spoon the mixture evenly onto each tortilla and sprinkle with fresh cilantro.
- Fold the tortillas in half to create tacos. Serve with lime wedges on the side.
