  • Black beans - 400 grams (canned, drained and rinsed)
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Corn tortillas - 4
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, cut into wedges

Steps

  1. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, cumin, smoked paprika, salt, and black pepper to the skillet. Stir and cook for another minute until fragrant.
  3. Add the drained black beans to the skillet, and mash them gently with a fork or potato masher, leaving some chunks for texture. Cook for about 5-7 minutes until heated through and creamy.
  4. While the beans are cooking, warm the corn tortillas in a separate skillet for about 30 seconds on each side until pliable.
  5. Once the beans are ready, remove them from heat. Spoon the mixture evenly onto each tortilla and sprinkle with fresh cilantro.
  6. Fold the tortillas in half to create tacos. Serve with lime wedges on the side.
