- Red onion - 1/4 cup (40g), finely chopped
- Cilantro - 1/4 cup (15g), chopped
- Lime juice - 2 tablespoons (30ml)
- Avocado - 1 medium (150g), mashed
- Olive oil - 1 tablespoon (15ml)
- Cumin - 1 teaspoon (2g)
- Salt - 1/2 teaspoon (3g)
- Pepper - 1/4 teaspoon (1g)
- Chili powder - 1/2 teaspoon (1g)
- Garlic powder - 1/2 teaspoon (1g)
Steps
- In a small skillet, heat the olive oil over medium heat. Add the chopped red onion and sauté for about 3-4 minutes until translucent.
- Add the drained black beans, cumin, chili powder, garlic powder, salt, and pepper to the skillet. Stir and cook for another 5 minutes until heated through.
- While the beans are cooking, prepare the avocado sauce by mashing the avocado in a bowl. Stir in the lime juice and half of the chopped cilantro. Set aside.
- Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
- To assemble, spoon the black bean mixture onto each tortilla, drizzle with the avocado sauce, and sprinkle with the remaining cilantro.
