  • Canned black beans - 1 cup (240g), drained and rinsed
  • Red onion - 1/4 cup (40g), finely chopped
  • Cilantro - 1/4 cup (15g), chopped
  • Lime juice - 2 tablespoons (30ml)
  • Avocado - 1 medium (150g), mashed
  • Olive oil - 1 tablespoon (15ml)
  • Cumin - 1 teaspoon (2g)
  • Salt - 1/2 teaspoon (3g)
  • Pepper - 1/4 teaspoon (1g)
  • Chili powder - 1/2 teaspoon (1g)
  • Garlic powder - 1/2 teaspoon (1g)

Steps

  1. In a small skillet, heat the olive oil over medium heat. Add the chopped red onion and sauté for about 3-4 minutes until translucent.
  2. Add the drained black beans, cumin, chili powder, garlic powder, salt, and pepper to the skillet. Stir and cook for another 5 minutes until heated through.
  3. While the beans are cooking, prepare the avocado sauce by mashing the avocado in a bowl. Stir in the lime juice and half of the chopped cilantro. Set aside.
  4. Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
  5. To assemble, spoon the black bean mixture onto each tortilla, drizzle with the avocado sauce, and sprinkle with the remaining cilantro.
