Ingredients

  • Black beans - 200 grams (cooked)
  • Pork shoulder - 250 grams (cubed)
  • Onion - 1 medium (diced)
  • Garlic - 2 cloves (minced)
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Corn tortillas - 4
  • Cilantro - 2 tablespoons (chopped)
  • Lime - 1 (cut into wedges)
  • Olive oil - 1 tablespoon

Steps

  1. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and cubed pork shoulder to the skillet. Cook for about 10 minutes, stirring occasionally, until the pork is browned on all sides.
  3. Sprinkle cumin, chili powder, salt, and black pepper over the pork. Stir well to combine and cook for an additional 15 minutes, or until the pork is tender and cooked through.
  4. While the pork is cooking, warm the black beans in a small saucepan over low heat until heated through. Mash them slightly with a fork for a creamier texture, if desired.
  5. Once the pork is cooked, assemble the tacos by placing a generous spoonful of black beans on each corn tortilla followed by the pork mixture.
  6. Top each taco with chopped cilantro and serve with lime wedges on the side.
