- Corn tortillas - 4 pieces
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Cumin - 1 teaspoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
Steps
- Heat the olive oil in a skillet over medium heat. Add the diced onion and minced garlic, cooking until softened, about 3-4 minutes.
- Season the duck breast with salt, black pepper, and cumin. Place the duck breast skin-side down in the skillet and cook for 6-7 minutes until the skin is crispy.
- Flip the duck breast and cook for an additional 5-6 minutes, or until the internal temperature reaches 65°C (150°F). Remove from the skillet and let it rest for 5 minutes.
- In the same skillet with the onion and garlic, add the cooked black beans and stir to combine. Cook for 3-4 minutes until heated through. Adjust seasoning with salt and pepper.
- While the beans are warming, heat the corn tortillas in a separate skillet for about 30 seconds on each side until pliable.
- Slice the duck breast into thin strips. To assemble the tacos, place a spoonful of black beans on each tortilla, top with duck slices, and garnish with chopped cilantro.
- Serve with lime wedges on the side for squeezing over the tacos.
