Ingredients

  • Corn tortillas - 4 small (about 15 cm diameter)
  • Canned black beans - 240 grams, drained and rinsed
  • Fresh jitomate (tomato) - 1 large, diced
  • Red onion - 50 grams, finely chopped
  • Garlic - 1 clove, minced
  • Cilantro - 15 grams, chopped
  • Lime - 1, juiced
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a skillet over medium heat, add the olive oil and sauté the chopped red onion until translucent, about 3 minutes.
  2. Add the minced garlic to the skillet and cook for another minute until fragrant.
  3. Incorporate the drained black beans into the skillet, mashing them slightly with a fork while stirring. Season with salt and black pepper to taste. Cook for about 5 minutes, allowing the flavors to meld.
  4. Remove the skillet from heat and mix in the diced jitomate and chopped cilantro. Add lime juice and stir to combine.
  5. Warm the corn tortillas in a separate dry skillet for about 30 seconds on each side until pliable.
  6. Assemble the tacos by spooning the bean and tomato mixture onto each tortilla. Serve immediately with additional lime wedges if desired.
