Ingredients

  • pinto beans - 200 grams
  • water - 1 liter
  • chorizo (Halal) - 100 grams, diced
  • onion - 1 small, chopped
  • garlic - 2 cloves, minced
  • jalapeño - 1, diced
  • cumin - 1 teaspoon
  • oregano - 1 teaspoon
  • salt - to taste
  • corn tortillas - 4
  • cilantro - a handful, chopped
  • lime - 1, cut into wedges

Steps

  1. Rinse the pinto beans under cold water and soak them in 1 liter of water for at least 4 hours or overnight.
  2. Drain the soaked beans and place them in a pot with fresh water. Bring to a boil, then reduce heat and simmer for 30 minutes until tender.
  3. In a separate skillet, cook the diced Halal chorizo over medium heat until browned, about 5 minutes. Remove and set aside, leaving the rendered fat in the skillet.
  4. Add the chopped onion and minced garlic to the skillet, sautéing until the onion is translucent, about 3-4 minutes.
  5. Add the diced jalapeño, cumin, oregano, and the cooked beans (along with some of their cooking liquid) to the skillet. Simmer for an additional 5-10 minutes, stirring occasionally, and season with salt to taste.
  6. Warm the corn tortillas on a dry skillet or grill for about 30 seconds on each side until pliable.
  7. To assemble, spoon the charro beans mixture onto each tortilla, top with cooked chorizo, and garnish with chopped cilantro.
  8. Serve the tacos with lime wedges on the side for squeezing over the top.
