Ingredients
- pinto beans - 200 grams
- water - 1 liter
- chorizo (Halal) - 100 grams, diced
- onion - 1 small, chopped
- garlic - 2 cloves, minced
- jalapeño - 1, diced
- cumin - 1 teaspoon
- oregano - 1 teaspoon
- salt - to taste
- corn tortillas - 4
- cilantro - a handful, chopped
- lime - 1, cut into wedges
Steps
- Rinse the pinto beans under cold water and soak them in 1 liter of water for at least 4 hours or overnight.
- Drain the soaked beans and place them in a pot with fresh water. Bring to a boil, then reduce heat and simmer for 30 minutes until tender.
- In a separate skillet, cook the diced Halal chorizo over medium heat until browned, about 5 minutes. Remove and set aside, leaving the rendered fat in the skillet.
- Add the chopped onion and minced garlic to the skillet, sautéing until the onion is translucent, about 3-4 minutes.
- Add the diced jalapeño, cumin, oregano, and the cooked beans (along with some of their cooking liquid) to the skillet. Simmer for an additional 5-10 minutes, stirring occasionally, and season with salt to taste.
- Warm the corn tortillas on a dry skillet or grill for about 30 seconds on each side until pliable.
- To assemble, spoon the charro beans mixture onto each tortilla, top with cooked chorizo, and garnish with chopped cilantro.
- Serve the tacos with lime wedges on the side for squeezing over the top.
