  • Black pepper - 1/2 teaspoon
  • Corn tortillas - 4 pieces
  • Red onion - 1 small, diced
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, cut into wedges
  • Avocado - 1, sliced
  • Salsa (store-bought or homemade) - 1/2 cup

Steps

  1. In a saucepan, bring the vegetable broth to a boil and add the textured soy protein. Let it simmer for 10 minutes until softened, then drain and squeeze out excess liquid.
  2. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the cooked soy protein to the skillet and season with cumin, smoked paprika, chili powder, salt, and black pepper. Cook for about 5-7 minutes, stirring occasionally, until the soy protein is heated through and slightly crispy.
  4. While the soy mixture cooks, warm the corn tortillas in a separate pan or directly over the flame for a few seconds on each side until pliable.
  5. Assemble the tacos by placing a generous portion of the soy mixture on each tortilla. Top with diced red onion, chopped cilantro, and avocado slices.
  6. Serve with lime wedges and your choice of salsa on the side.
