  • Asparagus - 200 grams
  • Corn tortillas - 4 small

  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Avocado - 1 medium, sliced
  • Fresh cilantro - 2 tablespoons, chopped
  • Salsa - 100 grams

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Trim the tough ends off the asparagus and place them in a bowl.
  3. Add olive oil, minced garlic, cumin, salt, and black pepper to the asparagus, tossing to coat evenly.
  4. Spread the asparagus on a baking sheet in a single layer and roast in the oven for 15 minutes until tender.
  5. While the asparagus is roasting, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
  6. Once the asparagus is done, remove it from the oven and drizzle with lime juice.
  7. To assemble the tacos, place 3-4 asparagus spears on each tortilla, top with sliced avocado, salsa, and chopped cilantro.
