  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Corn tortillas - 4 small
  • Radishes - 4, thinly sliced
  • Avocado - 1, sliced
  • Sour cream - 2 tablespoons

Steps

  1. In a skillet, heat olive oil over medium heat. Add the chopped red onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Increase the heat to medium-high and add the ground lamb. Cook, breaking it apart with a spatula, until browned, about 5-7 minutes.
  4. Stir in the cumin, coriander, paprika, salt, and black pepper. Cook for another 2-3 minutes until the spices are well combined and the lamb is cooked through.
  5. Remove from heat and stir in the chopped cilantro and lime juice. Adjust seasoning if needed.
  6. Warm the corn tortillas in a dry skillet for about 30 seconds on each side until pliable.
  7. Assemble the tacos by placing a generous amount of the lamb mixture on each tortilla.
  8. Top with sliced radishes, avocado, and a dollop of sour cream. Serve immediately.
