- Lime - 1, juiced
- Corn tortillas - 4 small
- Radishes - 4, thinly sliced
- Avocado - 1, sliced
- Sour cream - 2 tablespoons
Steps
- In a skillet, heat olive oil over medium heat. Add the chopped red onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Increase the heat to medium-high and add the ground lamb. Cook, breaking it apart with a spatula, until browned, about 5-7 minutes.
- Stir in the cumin, coriander, paprika, salt, and black pepper. Cook for another 2-3 minutes until the spices are well combined and the lamb is cooked through.
- Remove from heat and stir in the chopped cilantro and lime juice. Adjust seasoning if needed.
- Warm the corn tortillas in a dry skillet for about 30 seconds on each side until pliable.
- Assemble the tacos by placing a generous amount of the lamb mixture on each tortilla.
- Top with sliced radishes, avocado, and a dollop of sour cream. Serve immediately.
