Ingredients
- Pork shoulder - 500 grams
- Achiote paste - 2 tablespoons
- Orange juice - 100 ml
- Lime juice - 30 ml
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Corn tortillas - 4 small
- Red onion - 50 grams, thinly sliced
- Fresh cilantro - 20 grams, chopped
- Avocado - 1 small, sliced
- Salt - to taste
Steps
- In a bowl, mix the achiote paste, orange juice, lime juice, minced garlic, cumin, oregano, salt, and black pepper to create a marinade.
- Cut the pork shoulder into large chunks and coat them thoroughly with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.
- Preheat the oven to 150°C (300°F). Place the marinated pork in a baking dish, cover with foil, and bake for about 2.5 to 3 hours, until the pork is tender and easily shreds with a fork.
- Once cooked, remove the pork from the oven and let it rest for 10 minutes. Then shred the meat using two forks.
- Warm the corn tortillas in a dry skillet or microwave until soft. Fill each tortilla with shredded cochinita pibil, topped with sliced red onion, chopped cilantro, and avocado slices.
