Ingredients
- Red lentils - 100 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Smoked paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Tomato paste - 1 tablespoon
- Vegetable broth - 250 milliliters
- Corn tortillas - 4 small
- Fresh cilantro - for garnish
- Lime - 1, cut into wedges
Steps
- Rinse the red lentils under cold water until the water runs clear.
- In a pot, heat 1 tablespoon of olive oil over medium heat, then add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the smoked paprika, cumin, chili powder, salt, and black pepper, cooking for an additional minute.
- Add the rinsed lentils, tomato paste, and vegetable broth, bringing the mixture to a boil.
- Reduce the heat to low, cover, and let it simmer for 15-20 minutes, or until the lentils are soft and have absorbed most of the liquid.
- While the lentils are cooking, heat the remaining tablespoon of olive oil in a skillet over medium heat.
- Warm the corn tortillas in the skillet for about 30 seconds on each side until pliable.
- Once the lentil mixture is ready, use a fork to mash it slightly for a more chorizo-like texture.
- Fill each tortilla with the lentil chorizo, garnish with fresh cilantro, and serve with lime wedges on the side.
