  • Tomato paste - 1 tablespoon
  • Vegetable broth - 250 milliliters
  • Corn tortillas - 4 small
  • Fresh cilantro - for garnish
  • Lime - 1, cut into wedges

Steps

  1. Rinse the red lentils under cold water until the water runs clear.
  2. In a pot, heat 1 tablespoon of olive oil over medium heat, then add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the smoked paprika, cumin, chili powder, salt, and black pepper, cooking for an additional minute.
  5. Add the rinsed lentils, tomato paste, and vegetable broth, bringing the mixture to a boil.
  6. Reduce the heat to low, cover, and let it simmer for 15-20 minutes, or until the lentils are soft and have absorbed most of the liquid.
  7. While the lentils are cooking, heat the remaining tablespoon of olive oil in a skillet over medium heat.
  8. Warm the corn tortillas in the skillet for about 30 seconds on each side until pliable.
  9. Once the lentil mixture is ready, use a fork to mash it slightly for a more chorizo-like texture.
  10. Fill each tortilla with the lentil chorizo, garnish with fresh cilantro, and serve with lime wedges on the side.
