  • Cilantro - 2 tablespoons (chopped)
  • Lime - 1 (cut into wedges)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium pot, boil water and add the diced potatoes. Cook until tender, about 10 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Add the Halal chorizo to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
  4. Stir in the cooked potatoes, seasoning with salt and black pepper to taste. Cook for an additional 2-3 minutes until everything is heated through.
